Project Brief
Wingstop’s new restaurant at Birmingham Bullring required a commercial kitchen ventilation system capable of handling the demands of a high volume cooking operation. With a large bank of Pitco deep fat fryers producing significant levels of grease and cooking vapours, the system needed to provide effective extraction, improve kitchen safety and make ongoing maintenance as straightforward as possible.
The Solution
We supplied a ventilation canopy designed to manage the high grease output generated by the fryers. UL listed baffle grease filters and a high capacity grease control system capture grease before it enters the extract ductwork. Collected grease drains into large, removable grease drawers, making cleaning quicker and easier.
The canopy also features perforated supply air diffusers with disposable G4 filter media, returning fresh air to the kitchen at a low velocity. Integrated induction slots help contain cooking fumes and prevent them from escaping the canopy.
To improve long-term access, a structural maintenance walkway was installed above the canopy. The system is completed with recessed low-energy LED lighting and an ANSUL automatic fire suppression system.
