Project Brief
The Westin is a luxury 10-storey hotel on the banks of the River Thames. The hotel includes five busy commercial kitchens, featuring theatre style cooking, main production kitchens, banqueting facilities and several bars.
With so many cooking areas operating throughout the day, the project needed a kitchen ventilation system that could effectively manage cooking odours and grease. It also needed to reduce fire risk, protect the building and meet strict planning requirements.
The installation also had to provide a comfortable working environment for kitchen staff while safely supplying gas and electrical services to a large amount of commercial catering equipment.
The Solution
We installed Corsair’s Vortex-GDS UV system to provide secondary grease removal and odour control across the kitchen extract system. The UV technology breaks down grease and odours inside the ductwork.

The UV lamps operate automatically whenever the extract system is running. They also reduce grease build-up inside the ductwork, meaning less maintenance is needed over the lifetime of the system.
Each kitchen was fitted with extract and supply canopies that deliver clean, filtered air to support the safe operation of gas cooking equipment. Personal spot cooling nozzles were also installed beneath each supply canopy to improve comfort for kitchen staff during service.
With a large amount of equipment beneath each canopy, we designed and installed bespoke service distribution units to safely route gas and electrical supplies to every appliance. Stainless steel splashback cladding was fitted behind wall mounted cooking lines to create a durable, hygienic surface that is easy to clean.
To complete the installation, every canopy was fitted with an Ansul fire suppression system and energy efficient recessed LED lighting.
